Ingredients
  

  • 1 Cup White rice
  • 4 Cups Whole milk
  • 1/2 Cup Granulated sugar
  • 1/4 Tbsp Salt
  • 2 Eggs
  • 1 Tbsp Vanilla extract
  • Ground cinnamon for garnish (optional)
  • Raisins or other desired toppings (optional)

Instructions
 

  • In a medium-sized saucepan, combine the white rice, whole milk, granulated sugar, and salt. Stir well to combine.
  • Place the saucepan over medium heat and bring the mixture to a gentle simmer. Stir occasionally to prevent the rice from sticking to the bottom of the pan.
  • Reduce the heat to low and let the rice simmer uncovered for about 20-25 minutes, or until the rice is tender and the mixture has thickened to a creamy consistency. Stir occasionally during this process.
  • In a separate bowl, whisk the eggs until well beaten. Slowly add a ladleful of the hot rice mixture to the eggs, whisking continuously. This step helps temper the eggs, preventing them from curdling when added to the hot pudding.
  • Gradually pour the tempered egg mixture back into the saucepan with the remaining rice pudding. Stir well to incorporate the eggs into the pudding.
  • Cook the pudding on low heat for an additional 5 minutes, stirring constantly, until the mixture thickens further and the eggs are fully cooked.
  • Remove the saucepan from the heat and stir in the vanilla extract to enhance the flavor of the pudding.
  • Allow the creamy rice pudding to cool for a few minutes before transferring it to individual serving bowls or a large serving dish.
  • If desired, sprinkle ground cinnamon over the top for added flavor and a touch of warmth. You can also add raisins or any other toppings of your choice.
  • Serve the creamy rice pudding warm or chilled, depending on your preference. It can be enjoyed as is or refrigerated for a few hours for a chilled treat.
