Chocolate Base

  • 2 cups whole milk
  • 1 cup heavy cream
  • ½ cup granulated sugar
  • ¼ cup unsweetened cocoa powder
  • 4 ounces dark chocolate, finely chopped
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon salt

Optional Mix-Ins

  • ¼ cup mini chocolate chips
  • Chocolate chunks
  • Crushed chocolate cookies
  • Chocolate shavings

Instructions
 

  • In a saucepan, whisk together the sugar, cocoa powder, and salt.
  • Gradually whisk in the milk and heavy cream until smooth.
  • Cook over medium heat, stirring constantly, until the mixture begins to steam.
  • Mix the cornstarch with water to form a slurry, then stir it into the chocolate mixture.
  • Continue cooking for 2–3 minutes until the mixture thickens slightly.
  • Remove from the heat and stir in the chopped dark chocolate until completely melted.
  • Add the vanilla extract and allow the mixture to cool to room temperature.
  • Fold in mini chocolate chips if desired.
  • Pour into ice pop molds, insert sticks, and freeze for at least 6 hours or overnight.
  • Run warm water over the molds for a few seconds before removing the fudge pops.
