Ingredients
  

  • 10 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese (or cheese blend)
  • 1 onion, finely chopped
  • 1 bell pepper, diced
  • 1 cup cooked sausage, bacon, or ham (optional)
  • 2 cups frozen hash browns (optional for extra heartiness)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • 1 tbsp butter for greasing the baking dish

Instructions
 

  • Preheat oven to 180°C (350°F). Grease a baking dish with butter.
  • In a large bowl, whisk eggs, milk, salt, pepper, and garlic powder.
  • Spread hash browns evenly in the dish, if using.
  • Layer meat and vegetables on top.
  • Pour egg mixture over the layers and sprinkle cheese on top.
  • Bake for 35–40 minutes until eggs are set and top is golden.
  • Let it rest for 5 minutes before slicing and serving.

Notes

  • This casserole can be prepared the night before and baked in the morning.
  • Add spinach, mushrooms, or zucchini for a healthier version.
  • Swap cheddar for mozzarella, Swiss, or pepper jack for flavor variety.
  • Leftovers can be stored in the fridge for up to 3 days.
