Ingredients
  

  • 4 large egg yolks
  • ½ cup granulated sugar
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • ½ teaspoon freshly grated nutmeg
  • ¼ teaspoon ground cinnamon
  • Pinch of salt
  • Additional nutmeg or cinnamon for garnish

Instructions
 

  • In a medium bowl, whisk the egg yolks and sugar until pale and creamy.
  • In a saucepan, combine the milk, heavy cream, nutmeg, cinnamon, and salt.
  • Heat over medium heat until the mixture is hot but not boiling.
  • Slowly pour a small amount of the hot milk into the egg mixture while whisking continuously to temper the eggs.
  • Gradually return the egg mixture to the saucepan.
  • Cook over low heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon.
  • Strain the mixture through a fine-mesh sieve for an extra-smooth texture.
  • Chill in the refrigerator for at least 2 hours.
  • Before serving, whisk or froth the eggnog until light and foamy. Pour into glasses, garnish with whipped cream and freshly grated nutmeg, and serve chilled.
