- 1 kg chicken (thighs, drumsticks, or mixed pieces)
- 4–5 medium potatoes, peeled and cut into wedges
- 1/3 cup fresh lemon juice
- 1/4 cup extra virgin olive oil
- 5 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- 1 cup chicken broth or water
Preheat the oven to 200°C (400°F).
Arrange the chicken and potato wedges in a large baking pan.
In a bowl, whisk together lemon juice, olive oil, garlic, oregano, salt, and pepper.
