Ingredients
  

  • 1 kg chicken (thighs, drumsticks, or mixed pieces)
  • 4–5 medium potatoes, peeled and cut into wedges
  • 1/3 cup fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • 5 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth or water

Instructions
 

  • Preheat the oven to 200°C (400°F).
  • Arrange the chicken and potato wedges in a large baking pan.
  • In a bowl, whisk together lemon juice, olive oil, garlic, oregano, salt, and pepper.
  • Pour the mixture evenly over the chicken and potatoes, tossing to coat well.
  • Add the chicken broth to the pan.
  • Roast uncovered for about 45 minutes, turning once halfway.
  • Increase heat slightly and roast for another 15 minutes until the chicken is golden and potatoes are crispy.
  • Garnish with fresh herbs and serve hot.
