For the Crust & Crumble Topping:
- 1 ½ cups (150g) rolled oats
- 1 (125g) all-purpose flour
- ½ cup (100g) brown sugar
- ½ tsp cinnamon
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup (115g) unsalted butter, melted
For the Strawberry Filling:
- 2 cups (300g) fresh strawberries, diced
- ¼ cup (50g) granulated sugar
- 1 tbsp cornstarch
- 1 tsp lemon juice
Preheat oven to 350°F (175°C) and line a 9x9-inch baking dish with parchment paper.
Prepare the crust & topping: In a large bowl, mix oats, flour, brown sugar, cinnamon, baking soda, and salt. Add melted butter and mix until crumbly.
Press & bake: Press two-thirds of the mixture into the baking dish and bake for 10 minutes.
Make the filling: In a saucepan, combine strawberries, sugar, cornstarch, and lemon juice. Cook over medium heat until thickened (about 5 minutes).
Assemble the bars: Pour the strawberry filling over the baked crust, then sprinkle the remaining oat mixture on top.
Bake: Return to the oven and bake for 25 minutes, until golden brown.
Cool & serve: Let the bars cool completely before cutting into squares.

You can use frozen strawberries, but thaw and drain excess liquid first.

For a gluten-free version, use oat flour instead of all-purpose flour.
