- 1 lb Italian sausage, casings removed
- 1 tablespoon olive oil
- 1 tablespoon olive oil
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup small pasta or potatoes
- 1 teaspoon dried Italian seasoning
- 1 cup fresh spinach or kale
- Salt and pepper, to taste
- Grated Parmesan cheese, for garnish
Brown the Sausage:Heat olive oil in a large pot. Add the sausage and cook until browned. Break it into small pieces while cooking. Remove and set aside. Sauté the Vegetables:In the same pot, add onion, carrots, and celery. Cook until softened. Stir in garlic and cook for one more minute. Build the Soup Base:Pour in chicken broth and diced tomatoes. Add Italian seasoning, salt, and pepper. Bring the mixture to a gentle boil. Add Pasta or Potatoes:Stir in pasta or potatoes. Cook until tender, about 10 minutes. Combine and Finish:Return the sausage to the pot. Add spinach or kale and cook for 2–3 minutes until wilted. Taste and adjust seasoning.
