Lasagna Alfredo Roll Ups are pasta sheets rolled with cheese, chicken, and spinach, smothered in Alfredo sauce, and baked to perfection.

- 12 lasagna noodles, cooked and drained
- 2 cups cooked chicken, shredded
- 2 cups ricotta cheese
- 1 ½ cups mozzarella cheese, shredded
- ½ cup Parmesan cheese, grated
- 2 cups fresh spinach, chopped
- 2 cups Alfredo sauce (store-bought or homemade)
- 1 egg, lightly beaten
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- ½ teaspoon salt
- 2 tablespoons parsley, chopped (for garnish)
Preheat oven to 375°F (190°C).
Cook lasagna noodles according to package directions. Drain and lay flat.
In a bowl, combine ricotta, egg, spinach, chicken, garlic powder, salt, pepper, and ½ cup mozzarella. Mix well.
Spread a thin layer of Alfredo sauce on the bottom of a baking dish.
Spread 2–3 tablespoons of filling on each noodle and roll tightly.
Place roll ups seam-side down in the dish.
Pour Alfredo sauce over the roll ups, covering them evenly.
Sprinkle with remaining mozzarella and Parmesan cheese.
Cover with foil and bake for 25 minutes.
Remove foil and bake an additional 10 minutes until bubbly and golden.
Garnish with parsley before serving.
