For the Stir-Fry

  • 1 pound mushrooms (button, cremini, or shiitake), sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 medium carrot, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons vegetable oil

For the Sauce

  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon sesame oil
  • 1 teaspoon honey or brown sugar
  • 1 teaspoon cornstarch
  • 2 tablespoons water

Garnish

  • Sesame seeds
  • Sliced green onions

Instructions
 

  • In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, honey, cornstarch, and water. Set aside.
  • Wash and slice the mushrooms and vegetables into bite-sized pieces.
  • Heat vegetable oil in a large wok or skillet over high heat.
  • Add garlic and ginger, stirring for about 30 seconds until fragrant.
  • Add mushrooms and cook for 4–5 minutes until they release moisture and begin to brown.
  • Add bell peppers, broccoli, and carrots.
  • Stir-fry for 3–4 minutes until vegetables are crisp-tender.
  • Pour the prepared sauce over the vegetables and mushrooms.
  • Stir continuously until the sauce thickens and coats everything evenly.
  • Remove from heat and garnish with sesame seeds and green onions before serving.
