Ingredients
  

  • 3 large eggs
  • 1 cup sugar
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup matzo cake meal
  • ½ cup potato starch
  • ½ tsp salt
  • ½ cup chopped walnuts or almonds
  • ½ cup chocolate chips (Passover-certified)
  • Extra sugar for sprinkling

Instructions
 

  • Preheat oven to 180°C (350°F) and line a baking tray with parchment paper.
  • In a large bowl, beat eggs and sugar until light and fluffy.
  • Add oil and vanilla extract, mixing well.
  • Stir in matzo cake meal, potato starch, and salt to form a soft dough.
  • Fold in nuts and chocolate chips evenly.
  • Divide dough into 2 logs and place on the baking sheet.
  • Bake for 25–30 minutes until lightly golden.
  • Remove, cool slightly, then slice into 1-inch pieces.
  • Lay slices flat and bake again for 10–15 minutes until crisp.
  • Sprinkle with sugar and cinnamon before serving.

  • Dough will be slightly sticky—this is normal.
  • Wet hands to shape logs easily.
