  • 14 ounces smoked sausage, sliced
  • 1 medium onion, diced
  • 2 celery stalks, diced
  • 1 green bell pepper, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper (optional)
  • 1 teaspoon salt (adjust to taste)
  • 1 tablespoon olive oil

For Serving

  • 4 cups cooked white rice
  • Fresh parsley, chopped
  • Green onions, sliced

Instructions
 

Sauté the Sausage and Vegetables

  • Set the pressure cooker to sauté mode.Add olive oil and sliced sausage.Cook until lightly browned.Add onion, celery, and bell pepper.Cook for 4–5 minutes until softened.Stir in garlic and cook for 30 seconds.

Add Remaining Ingredients

  • Add rinsed beans.Pour in chicken broth.Add bay leaves, thyme, paprika, black pepper, cayenne, and salt.Stir well to combine.

Pressure Cook

  • Secure the lid and seal the pressure valve.Cook on High Pressure for 40 minutes.Allow a natural pressure release for 15 minutes.Carefully release any remaining pressure.

Finish the Dish

  • Remove bay leaves.Mash a small portion of the beans for a creamier texture.Stir thoroughly.

Serve

  • Spoon cooked rice into serving bowls.Top with red beans and sausage.Garnish with parsley and green onions.
