Ingredients
  

For the Brownie Layer:

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp red food coloring
  • 1 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt

For the Cheesecake Layer:

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease or line an 8x8-inch baking pan with parchment paper.
  • Prepare the brownie layer: In a bowl, combine melted butter, sugar, eggs, vanilla extract, and red food coloring. Mix until smooth.
  • In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and stir until combined.
  • Pour the brownie batter into the prepared baking pan and spread evenly.
  • Prepare the cheesecake layer: In a separate bowl, beat the softened cream cheese, sugar, egg, and vanilla extract until smooth and creamy
  • .Drop spoonfuls of the cheesecake mixture on top of the brownie batter and use a knife or toothpick to swirl the two mixtures together.
  • Bake for 35-40 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Let cool in the pan before slicing into squares.

Notes

  • Make sure to let the brownies cool completely before slicing to get clean edges.
  • Use gel food coloring for the brightest red color.
  • If you want a stronger cream cheese flavor, increase the amount of cream cheese in the cheesecake layer.
  • These brownies can be stored in an airtight container in the fridge for up to 4 days.
