Instructions
 

  • Prepare the Broth:
    In a pot, bring the chicken or vegetable broth to a gentle simmer. Add the minced ginger and about half of the chopped green onions. Let the flavors infuse for a few minutes.
  • Season the Broth:
    Add salt, white pepper, and soy sauce to the simmering broth. Adjust the seasoning to your taste preferences. The saltiness of the broth can vary depending on the type of broth you use.
  • Thicken the Soup:
    In a small bowl, dissolve the cornstarch in water to create a slurry. Slowly pour the cornstarch mixture into the simmering broth while stirring continuously. This will help thicken the soup slightly.
  • Egg Drop Technique:
    Gradually pour the lightly beaten eggs into the soup while gently stirring the soup in one direction. The eggs will form delicate strands as they cook in the hot broth.
  • Finish the Soup:
