For the Salad

  • 4 ears fresh corn, husked
  • 4 large heirloom tomatoes, chopped
  • ¼ cup red onion, finely sliced
  • ¼ cup fresh basil leaves, torn
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons toasted pumpkin seeds or sunflower seeds

For the Vinaigrette

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

Instructions
 

  • Preheat the oven to 425°F (220°C). Place corn on a baking sheet and roast for 12–15 minutes, turning occasionally until lightly charred.
  • Allow the corn to cool slightly. Using a sharp knife, carefully cut the kernels from the cobs.
  • Wash and chop the heirloom tomatoes. Thinly slice the red onion and prepare the fresh herbs.
  • Whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and black pepper in a small bowl.
  • In a large serving bowl, combine roasted corn, tomatoes, red onion, basil, and parsley.
  • Pour the vinaigrette over the salad and toss gently to combine.
  • Top with feta cheese and toasted seeds. Serve immediately or chill briefly before serving.
