Sushi bake is a delicious and easy-to-make dish that combines all the flavors of sushi in a baked casserole form. This recipe features salmon as the main protein, creating a rich and flavorful meal perfect for any occasion.

Ingredients
  

  • 2 cup sushi rice
  • 2 1/2 cup water
  • 1/2 cup rice vinegar
  • 1/4 cup sugar
  • 1/2 tbsp salt
  • 1 lb salmon fillet
  • 1 cup imitation crab
  • 1 cup mayonnaise
  • 1/4 cup sriracha sauce
  • 1/4 cup cream cheese
  • 2 tbsp soy sauce
  • 2 tbsp sesame oil
  • 2 sheets seaweed
  • 1/4 cup green onions
  • 1/4 cup furikake seasoning
  • 1 sliced avocado
  • Pickled ginger

Instructions
 

  • Prepare the Sushi Rice:
    Rinse the sushi rice under cold water until the water runs clear.
    Cook the rice with 2 1/2 cups of water in a rice cooker or on the stovetop according to package instructions.
    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, gently fold the vinegar mixture into the rice. Let it cool slightly.
  • Cook the Salmon:
    Preheat your oven to 375°F (190°C).
    Place the salmon fillet on a baking sheet, drizzle with sesame oil, and bake for 15-20 minutes or until cooked through. Let it cool, then flake the salmon into pieces.
  • Assemble the Casserole:
    In a mixing bowl, combine the flaked salmon, imitation crab, mayonnaise, sriracha, cream cheese, and soy sauce. Mix until well combined.
    Spread the cooked sushi rice evenly in the bottom of a baking dish.
    Layer the salmon and crab mixture on top of the rice.
  • Bake the Casserole:
    Sprinkle the furikake seasoning evenly over the top.
    Bake in the preheated oven for 15-20 minutes, or until the top is golden and bubbly.
  • Serve:
    Remove from the oven and let it cool slightly.
    Garnish with nori strips and chopped green onions.
    Serve with sliced avocado, soy sauce, wasabi, and pickled ginger on the side.

Notes

Fresh salmon is ideal for its texture and flavor, but high-quality frozen salmon can also work well. Ensure it's fully thawed before use. Wild salmon is typically leaner and has a richer flavor, while farmed salmon is fattier and more affordable. Choose based on your preference and availability.
