Swamp Dogs are smoky sausages wrapped in crispy bacon and coated with a sweet-and-spicy glaze made from brown sugar and seasonings. Ingredients
  

  • 12 smoked cocktail sausages (or 2 large smoked sausages cut into bite-sized pieces)
  • 12 slices bacon, cut in half
  • ¾ cup light brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • 2 tablespoons barbecue sauce (optional for brushing)

Instructions
 

  • Preheat the oven to 375°F (190°C). Line a baking sheet with foil and place a wire rack on top.
  • Wrap each sausage with a half slice of bacon and secure it with a toothpick.
  • In a small bowl, mix together the brown sugar, garlic powder, smoked paprika, black pepper, and cayenne pepper.
  • Roll each bacon-wrapped sausage in the brown sugar mixture until evenly coated.
  • Arrange the wrapped sausages on the prepared wire rack.
  • Bake for 30–35 minutes, or until the bacon is crispy and the sugar has caramelized.
  • If desired, brush lightly with barbecue sauce during the last 5 minutes of baking.
  • Allow the Swamp Dogs to cool for a few minutes before serving.
  • Serve warm with barbecue sauce, honey mustard, ranch dressing, or spicy aioli.

  • Thin-cut bacon crisps more easily than thick-cut bacon.
  • Secure each piece with a toothpick before baking.
