Ingredients
  

For Meatloaf:

  • 500g ground beef (or beef & pork mix)
  • 1 cup breadcrumbs
  • 1 egg
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • ½ cup milk
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • ½ tsp black pepper

For Tangy Glaze:

  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp yellow mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp soy sauce (optional)

Instructions
 

  • Preheat your oven to 180°C (350°F).
  • In a large bowl, combine ground meat, breadcrumbs, egg, onion, garlic, milk, ketchup, Worcestershire sauce, salt, and pepper. Mix gently until just combined.
  • Form into loaf shape and place in a greased baking dish or loaf pan.
  • Mix ketchup, brown sugar, mustard, vinegar, and soy sauce until smooth.
  • Bake meatloaf for 30 minutes.
  • Remove from oven and spread glaze generously on top.
  • Return to oven and bake for another 25 minutes until fully cooked and glaze is caramelized.
  • Let it rest for 10 minutes before slicing. Serve warm.

  • Do not overmix to keep meatloaf tender.
  • Adjust vinegar for more or less tanginess.
