Ingredients
  

  • 2 large cucumbers, thinly sliced
  • ½ small red onion, thinly sliced
  • ¼ cup rice vinegar
  • 1 tablespoon lime juice
  • 1 tablespoon soy sauce
  • 1 tablespoon sugar or honey
  • 1 teaspoon sesame oil
  • 1 small red chili, finely sliced
  • 2 tablespoons chopped roasted peanuts
  • 2 tablespoons fresh cilantro, chopped
  • 1 teaspoon sesame seeds
  • Salt to taste

Instructions
 

  • Wash and thinly slice cucumbers and red onion. Place them in a large bowl.
  • In a small bowl, whisk together rice vinegar, lime juice, soy sauce, sugar, sesame oil, and salt until combined.
  • Pour the dressing over the cucumber mixture and toss gently.
