Ingredients

Instructions
 

Toast the Coconut

  • Preheat oven to 350°F (175°C).Spread coconut evenly on a baking sheet.Toast for 5–7 minutes until golden brown.Stir occasionally to prevent burning.

Prepare the Caramel Filling

  • In a saucepan, melt butter over medium heat.Add granulated sugar and brown sugar.Stir continuously until dissolved.Slowly add heavy cream and mix well.Remove from heat and cool slightly.Whisk in eggs, vanilla extract, and salt.

Assemble the Pie

  • Place pie crust in a 9-inch pie dish.Spread chopped pecans evenly over the crust.Sprinkle half of the toasted coconut over pecans.Pour caramel filling carefully into the crust.

Bake

  • Bake at 350°F (175°C) for 45–50 minutes.Filling should be set but slightly jiggly in the center.Cool completely on a wire rack.

Finish
