Ingredients
  

  • 1 1/2 cups of red wine (choose a red wine you enjoy drinking)
  • 3/4 cup of granulated sugar
  • 1/4 cup of cornstarch
  • 1/2 teaspoon of ground cinnamon
  • 1/4 teaspoon of ground nutmeg
  • 1/4 teaspoon of salt
  • 4 cups of mixed berries (e.g., raspberries, blackberries, and blueberries)
  • For the Pie Crust: 2 1/2 cups of all-purpose flour
  • 1 cup (2 sticks) of cold unsalted butter, cubed
  • 1 teaspoon of salt
  • 6-8 tablespoons of ice-cold water

Instructions
 

  • Prepare the Pie Crust
    In a large mixing bowl, combine the all-purpose flour and salt.
    Add the cold, cubed butter to the flour mixture.
  • Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.
  • Gradually add ice-cold water, one tablespoon at a time, and mix until the dough just comes together. Be careful not to overmix.
  • Divide the dough into two equal portions, shape them into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  • Prepare the Filling
    In a saucepan, combine the red wine, granulated sugar, cornstarch, ground cinnamon, ground nutmeg, and salt.
  • Heat the mixture over medium heat, stirring constantly until it thickens into a glossy sauce, typically around 5-7 minutes.
  • Remove the saucepan from heat and let it cool to room temperature.
    In a large mixing bowl, gently fold the mixed berries into the cooled red wine sauce until well combined.
  • Assemble the Pie
    Preheat your oven to 375°F (190°C).
    Roll out one of the chilled pie dough discs on a lightly floured surface to fit a 9-inch pie dish.
    Place the rolled-out dough into the pie dish, pressing it gently against the bottom and sides.
  • Pour the red wine and berry filling into the pie crust.
    Roll out the second pie dough disc and place it over the filling. Trim any excess dough and crimp the edges to seal the pie.
  • If desired, make a few decorative slits in the top crust to allow steam to escape.
  • Bake and Enjoy
    Place the pie in the preheated oven and bake for approximately 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
  • Remove the pie from the oven and allow it to cool for at least 30 minutes before slicing and serving.
  • Serve your Red Wine Pie warm or at room temperature. It's delightful on its own or with a scoop of vanilla ice cream for an extra treat.
