For the Pork
- 2 lbs (900 g) pork shoulder, pork loin, or pork tenderloin
- 2 tablespoons olive oil
For the Marinade
- 3 tablespoons achiote paste
- ½ cup fresh orange juice
- ¼ cup fresh lime juice
- 2 tablespoons lemon juice
- 4 cloves garlic, minced
- 2 tablespoons apple cider vinegar
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- ½ teaspoon ground black pepper
- 1 teaspoon salt
- 1 tablespoon olive oil
Trim any excess fat from the pork if necessary.
In a bowl, whisk together achiote paste, orange juice, lime juice, lemon juice, garlic, vinegar, cumin, oregano, smoked paprika, olive oil, salt, and pepper until smooth.
Coat the pork thoroughly with the marinade.
Cover and refrigerate for at least 4 hours or overnight.
Remove the pork from the refrigerator about 30 minutes before grilling.
Preheat the grill to medium-high heat and lightly oil the grates.
Grill the pork for 20–25 minutes, turning occasionally, until the internal temperature reaches 145°F (63°C) for pork loin or tenderloin. If using pork shoulder sliced into steaks, cook until tender and fully done.
Slice against the grain.
