Ingredients
  

For the Zucchini "Noodles":

  • 3 large zucchinis, thinly sliced lengthwise
  • 1 tsp salt (to remove moisture)

For the Meat Sauce:

  • 1 lb ground beef or turkey
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 1 (6 oz) can tomato paste
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper

For the Cheese Layer:

  • 1 cup ricotta cheese
  • 1 egg
  • ¼ cup grated Parmesan cheese

For Topping:

  • 1 ½ cups shredded mozzarella cheese
  • 2 tbsp fresh basil or parsley, chopped (optional)

Step 1: Prepare the Zucchini "Noodles"

  • Slice zucchinis lengthwise into thin strips (about ⅛ inch thick).
  • Lay the slices on a paper towel and sprinkle with salt. Let them sit for 10 minutes to release excess moisture.
  • Pat the zucchini dry with another paper towel before using.

Step 2: Make the Meat Sauce

  • In a skillet over medium heat, cook the ground beef (or turkey) until browned. Drain excess fat.
  • Add onion and garlic, cooking until fragrant (about 2 minutes).
