Ingredients
  

  • 2 1/2 Cups All-purpose
  • 2 1/2 Tbps Baking powder
  • 1/2 Tbsp Salt
  • 1 1/2 Tbsp Granulated sugar
  • 1/2 Tbsp Unsalted butter, softened
  • 3 Large eggs
  • 1 1/2 Vanilla extract
  • 1 1/4 Cup Milk
  • Gel food coloring (assorted colors)
  • flourButtercream frosting (for filling and covering)
  • Rainbow sprinkles (for decoration)

Instructions
 

  • Preheat your oven to the temperature specified on your cake mix or recipe (usually around 350°F or 180°C). Grease and flour your cake pans to ensure easy removal of the cakes.
  • In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  • In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy. This can be done with an electric mixer or by hand using a whisk or spatula.
  • Add the eggs, one at a time, to the butter and sugar mixture. Beat well after each addition. Then, stir in the vanilla extract.
  • Gradually add the dry ingredient mixture to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients, mixing well after each addition. This will ensure a well-incorporated batter.
  • Divide the cake batter equally into separate bowls, depending on the number of colors you want for your rainbow cake.
  • Using gel food coloring, tint each bowl of batter with vibrant colors of your choice. Stir well to distribute the color evenly. Start with a small amount of coloring and gradually add more until you achieve the desired intensity.
  • Take one prepared cake pan and pour the first colored batter into the center. Use a spatula to spread it evenly to the edges of the pan. Repeat this process with the remaining colored batters and pans.
  • Place the pans in the preheated oven and bake for the time specified in your recipe or until a toothpick inserted into the center of each cake comes out clean. Be mindful of the different baking times for each layer if they vary in thickness.
  • Once baked, remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then, transfer them to a wire rack to cool completely.
  • Assemble the cake by placing the first colored layer on a serving plate or cake stand. Spread a generous amount of buttercream frosting evenly over the surface.
  • Carefully place the next colored layer on top of the frosted one and repeat the process of spreading frosting. Continue layering until all the colored layers are stacked.
  • Use the remaining buttercream frosting to cover the entire cake, creating a smooth and even layer on the outside. You can use an offset spatula or a cake smoother for this step.
  • Add a final touch of decoration by sprinkling rainbow-colored sprinkles over the top of the cake.
  • Once decorated, refrigerate the cake for at least an hour to allow the frosting to set and the flavors to meld together.
